Take extra thick cut bacon and lay out on 2 broiler pans or raised cookie sheets. You don't have to do both rubs, they are just the best two for this recipe so I quite often do both for a variety. 

Put a TBS or more to taste of Spicy Ginger Beer Rub or Porky Pig Rub into a large bowl, add a 1/4 cup of real Maple syrup and 3 TBS of brown sugar, mix well.

I cut my bacon in half for an easier time, but you can leave yours whole, add a package of bacon to Maple-spice mix and mix with hands until well coated. 

I use a wire cooking rack on my cookie sheet but you can put aluminum foil on your cookie sheet and crumple it so the grease drains off the bacon a bit. 

Bake at 350 for 15-25 minutes or until crisp, candied, and done. Remember the bacon will become stiff as it cools so it can still be a bit pliable when hot, don't overdo it, you can always put it back in if it needs more time. 

Eat plain, on salads, in a BLT......your imagination is your only limit.
